Dry Rub Seasoning for Antelope Steak

I really enjoy making my own seasoning rubs from scratch for our game meat. It allows me to be able to enhance the natural flavors of each of the game animals we harvest. I know that this particular Wyoming antelope is much more mild in flavor than the past Nevada bucks we’ve brought home.

This dry rub is a spicy medley of seasonings that adds a slight punch to each and every bite. If you prefer a sweet heat, you can always add 1 tablespoon of brown sugar to the blend or simply season the steaks and then drizzle a little honey over the top prior to grilling.

Seasoning Rub Blend

Add all seasoning ingredients to a mortar and pestle and crush or use a small grinder to pulsate until semi-smooth. Rub all sides of the steak with seasoning. Marinate for an hour before grilling.

  • 2 tablespoons black peppercorns
  • 1 tablespoon red pepper flakes
  • 1 tablespoon coriander seeds
  • 1 tablespoon mustard seeds
  • 1 tablespoon sweet paprika
  • 1 tablespoon garlic powder
  • 1 teaspoon kosher salt

    I LIKE THIS DRY RUB SEASONING INGREDIENTS . I’M THINKING MORE FOR DEER OR VENISON AND ADD THAI CHILES OR TRINIDAD SCORPIAN BUTCH T DRIED PEPPERS IN THE SEASONING MIX FOR JERKY OR JERKY STICKS .
