Antelope Sirloin Mushroom Melt

Antelope Mushroom Melt

Seared antelope sirloin, sauteed red onion and mushrooms in browned butter with melted Havarti cheese, horseradish mayo on a toasted bagel. YES… Antelope does taste this good! (As always you can substitute antelope for elk or venison sirloin.)

  • 1-2 Antelope Sirloin
  • 1 large red onion sliced
  • 2 cups Portobello mushrooms sliced
  • 3 tablespoons butter
  • Havarti Cheese
  • Horseradish Mayo
  • 2 cloves of garlic minced
  • Your favorite Bagels

In a large cast iron skillet, sear antelope sirloin in 1 tablespoon butter and garlic. Brown sirloin on all sides and set aside. Add remaining butter to cast iron skillet and saute red onion and mushrooms. Slice bagels in half and top with a slice of Havarti cheese. Broil in oven until cheese melts.

Slice sirloin and add slices to bagel, top with mushrooms and onions and horseradish mayo. ~Enjoy!
