Ground Elk Burger Soup

This elk burger soup is so simple to make and uses even simpler ingredients. I’m always looking to create easy dinners with wild game without losing the flavor and this soup does exactly that. It’s quick to make and even better when eaten!

Ingredients

  • 1 pound ground elk burger
  • 4 cups spinach, packed tight
  • 15.5 oz white hominy, washed
  • 1/2 cup orzo pasta
  • 4 cups beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon kosher salt

Condiments

  • shredded cheese
  • chopped green scallions

Directions

Heat a large stockpot over medium heat and along with the olive oil. Add the ground elk burger cooking until browned. When the meat is cooked, add the hominy and stir in the cumin, coriander and salt. Add the spinach to the pot and continue stirring until the spinach becomes wilted from the heat. Add the orzo pasta along with beef broth and stir. Place a lid over the stockpot and reduce heat to low. Cook until the pasta is ready.

Garnish with shredded cheese and chopped green scallions and serve with tortilla chips.
